US - The USDA Food Safety and Inspection Service (FSIS) has updated its Directive on Safe and Suitable Ingredients Used in the Production of Meat, Poultry and Egg Products.
The update includes the addition of "an aqueous mixture of peroxyacetic acid, hydrogen peroxide, acetic acid,1- hydroxyethylidene-1, 1-diphosphonic acid (HEDP), water, and optionally sulfuric acid" as an antimicrobial.
It also includes a revision of sodium hydroxide and/or potassium hydroxide for use as an acidifier and alkaliser.
The Table of Safe and Suitable Ingredients identifies the food grade substances that have been approved in 21 Code of Federal Regulations for use in meat, poultry, and egg products as food additives, generally recognised as safe notices and pre-market notifications, and approved in letters conveying acceptability determinations.
